(Recipe) Tres Leches Cake

Tres Leches Cake




1 (18 1/4 oz) box of yellow cake mix           1 (12oz) can of evaporated milk
1/3 cup canola oil                                        1 1/4 cup heavy whipping cream
3 large eggs                                                 1 (14oz) can of sweetened condensed milk
1/2 teaspoon vanilla


Pre-heat oven to 350°. Coat a 9x13in pan with nonstick spray. In a medium bowl combine the cake mix, 1c. of the evaporated milk, the oil and eggs. Beat for 3 minutes until smooth. Bake for 30-35 minutes until cake is done. (a toothpick inserted in the center should come out clean) Cool on a wire rack.

In a medium bowl: whisk the sweetened condensed milk, the remaining evaporated milk, and 1/4 cup of heavy whipping cream. Poke holes in the top of the cake (a fork works) and pour the milk mixture evenly over. Refrigerate at least one hour - overnight. (I normally make this cake a few days in advance so that the milk has plenty of time to soak in the cake)

Before serving -- In a large mixing bowl: add remaining cream and the vanilla. Beat on high until soft peaks form. Either cover the cake in your whipped cream or serve individual pieces with it.

(*TIPS*) If you'd like you can always purchase Cool Whip or something similar and use that on top. It's just a bit too sweet for my tastes though. You can also add sugar into your cream before beating to sweeten it if making it homemade.
